Naples sits between two active volcanic systems: Campi Flegrei to the west, Vesuvius to the east. Both have been depositing material on the surrounding country for a very long time, and the country has been farmed through it.

Our soil blend is modelled on that ground. This entry is about what is actually in it, and where the evidence stops.

What the ash becomes

Volcanic ash and fine rock fragments weather into soils that behave unusually well. They are light and porous, so they hold air and water at the same time — which is the combination roots want and which most soils make you choose between. Soil scientists classify them as andosols. Fields nearest the vents have the deepest deposits.

The Romans called the plain around Naples Campania felix, the fertile countryside, which is not a subtle name.

What is in it, specifically: a study of buried soils at Somma Vesuviana, sealed under later eruption layers, found high exchangeable potassium and calcium and abundant available phosphorus. Those are the elements a plant spends most of its energy chasing. Potassium in particular is what a plant uses to regulate water — how much it holds, how fast it moves it, when it shuts the stomata.

That is a description of a soil. It is not yet an explanation of a tomato.

The tomatoes that carry the name

Two have protected designations tied to this ground.

San Marzano dell'Agro Sarnese-Nocerino — long, low-seeded, the sauce tomato — has held DOP status since 1996, with a production area defined across the Sarno–Nocera plain.

Pomodorino del Piennolo del Vesuvio — small, pointed, traditionally tied into clusters and hung through winter — was registered in December 2009, on the volcano's slopes.

A DOP is worth reading carefully. It certifies that a product comes from a defined place and is made a defined way. It does not certify that the place makes it taste better. That is a common misreading and we have made it ourselves.

Where we stop

Here is the sentence we wanted to write: volcanic soil, rich in potassium, produces the sweetness and concentration these tomatoes are known for.

We cannot write it, and not because it is obviously false — it is plausible, and growers there will tell you so. We could not find work that separates the soil from the rest of how these tomatoes are grown and made. Crediting the ground means holding the variety, the growing, the picking and the processing still, and no study we found does that.

The honest version is narrower: the soil is well described, the two designations are real and specific, and the link between them is not something we can hand you a citation for.

Why this matters to what we are doing

We model our blend on the structure and mineral profile of that ground because it is the part we can characterise and reproduce. That is a design decision, not a claim about outcome, and we have no field or laboratory data for our blend.

Whatever the soil contributes is not travelling to a shed in Australia anyway. Seed, water, timing and forty years of a grower's judgement stay where they are. We are copying one variable out of a system, and we know it.

The open question is not what the ground does. It is whether the difference can be measured at all. We put two people in front of the same eleven varieties and they agreed on two of them.
