The question
Eat a tomato in southern Italy in August, then eat one here. They do not compare.
Theirs is sweet before it is sharp, with acid behind the sugar, and the flesh holds when you cut it. Ours is watery and flat. Same species, often the same variety.
We wanted to close that gap. Everything below came out of trying.
What it turned into
We thought three things mattered: ground, weather, and how people grow. Each opened.
Which seed, saved by whom, chosen over how many seasons. What the water carries. How a season gets read — off the sky, now off satellites. Why fruit bred to survive a truck stopped smelling of anything: the aromas that make a tomato taste like one went with the breeding.
Then: who decides what gets grown, and where it goes.
The question was never really about a tomato.
Why volcanic ground
Weathered volcanic soil is more space than solid: light, holds water like a sponge, roots go straight through. The rock hands over potassium as it breaks down — slowly, not in one dose that washes past. The catch: it grips phosphorus and does not let go.
What we have actually done
Several grows now, in a purpose-built controlled environment we call the tomato lab. Temperature, humidity, light hours and every watering logged.
The soil is a blend we mix ourselves, built to imitate the structure and nutrient mix of southern Italian ground. It runs a programmed Mediterranean summer. Across the grows we have varied the growing practices and the irrigation, writing down what we did each time.
What we have not done is the part that would let us tell you anything. Nothing replicated. No untreated control at any scale. No soil and no fruit has gone off for laboratory analysis. So these are grows, not trials — nothing here was set up to prove anything — and we say nothing about what the blend does.
